A moist, warmly spiced apple cake naturally sweetened with jaggery. It gets softer and more flavorful over 2-3 days, making it the perfect make-ahead treat.
If you are looking for a brilliant make-ahead dessert but find yourself out of brown sugar, this Jaggery Spiced Apple Loaf is the ultimate baking triumph. Jaggery is an unrefined sugar that naturally carries gorgeous caramel and molasses notes, completely mimicking the depth of traditional brown sugar while adding its own unique, earthy richness. When paired with fresh, tart apples and warm spices, it creates a symphony of comforting autumn flavors. The true magic of this Jaggery Spiced Apple Loaf, however, lies in its incredible keeping qualities. Fruit-based bakes are notorious for their longevity, and this loaf is no exception. As it sits tightly wrapped on your counter over two or three days, the diced apples slowly release their natural juices into the crumb. This continuous hydration means the cake actually becomes denser, softer, and more intensely flavorful the longer you wait to slice it. It is the perfect bake-and-forget treat for a busy weekend or preparing ahead for guests. Enjoy a thick slice of this Jaggery Spiced Apple Loaf with your morning Turkish coffee or as an after-dinner dessert; the tender crumb and warm cinnamon-jaggery aroma will make it an instant household favorite.
Ingredients
- 300 g Apples (about 2 medium apples, peeled and diced)
- 150 g Jaggery Sugar
- 190 g Flour
- 115 g Butter
- 2 count Egg
- 60 g Yoghurt
- 1.5 tsp Cinnamon Powder
- 0.25 tsp Nutmeg Powder
- 0.5 tsp Vanilla Powder
- 1 tsp Baking Powder
- 0.5 tsp Baking Soda
- 0.25 tsp Salt
Instructions
- 1Preheat your oven to 175°C (350°F). Grease your loaf pan and line it with parchment paper for easy removal.
- 2If your jaggery sugar is in block form, finely grate or crush it so it can dissolve easily.
- 3In a bowl, toss the diced apples with the cinnamon powder and nutmeg powder. Set aside so the flavors can mingle.
- 4Melt the butter and let it cool slightly. In a large bowl, whisk together the melted butter and jaggery sugar until smooth.
- 5Beat the eggs into the butter mixture one at a time, then whisk in the yoghurt and vanilla powder until thoroughly combined.
- 6In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- 7Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- 8Fold the spiced apples into the batter.
- 9Pour the batter evenly into your prepared loaf pan.
- 10Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
- 11Let the loaf cool completely in the pan before wrapping tightly with plastic wrap to store.
Chef's Tips
- •Wrap the completely cooled cake tightly in cling film and store it on the counter. It will taste even better on day two as the apples release their moisture into the crumb.
- •Jaggery can sometimes have small lumps; making sure it's finely grated or crushed ensures an even, caramel sweetness throughout the cake.
