Ingredients
- 1 whole Zucchini (about 300g)
- 3 pieces Eggs
- 60 g Cheese (e.g. mozzarella or yellow) (about 1/2 cup shredded)
- 1 piece Lavash (about 60g)
- 2 tbsp Dill (small bunch)
- 1 tsp Oil
- 0.5 tsp Salt
- 0.25 tsp Pepper
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2Grate the zucchini on a coarse grater, mix with half of the salt and set aside for 5 minutes, then squeeze very hard to remove excess water.
- 3In a bowl, whisk the eggs with the remaining salt, pepper, chopped dill, and half of the shredded cheese.
- 4Add the squeezed zucchini to the egg mixture and mix thoroughly.
- 5Lightly grease a casserole dish with oil and line it with a sheet of lavash so that the sides slightly protrude (you can trim it to the size of the mold).
- 6Pour the zucchini, egg, and cheese mixture onto the lavash.
- 7Sprinkle the top with the remaining cheese.
- 8Bake for about 20-25 minutes, until the egg mixture sets and the top is nicely browned.
- 9Before serving, wait 2-3 minutes for the casserole to settle slightly for easier cutting.
