This vibrant salad pairs crispy, pan-fried tofu with nutrient-rich spinach and crunchy vegetables for a satisfying, high-protein meal. The dressing, made from miso paste and sesame oil, adds a deep umami flavor that perfectly complements the fresh ingredients. It’s a quick, healthy lunch or light dinner that makes excellent use of your perishable greens and tofu.
Ingredients
- 400 g Tofu (Firm)
- 150 g Spinach
- 1 medium Red Bell Pepper
- 1 medium Cucumber
- 1 medium Carrots
- 2 stalks Green Onions
- 1 tbsp Miso Paste
- 2 tbsp Rice Vinegar (or Apple Cider Vinegar)
- 1 tbsp Sesame Oil
- 1 tsp Ginger
- 1 tbsp Soy Sauce
- 1 tsp Sesame Seeds
- 1 tbsp Vegetable Oil (for frying)
Instructions
- 1Drain the tofu well and cut it into bite-sized cubes. Pat dry with a paper towel to remove excess moisture.
- 2Heat vegetable oil in a frying pan over medium-high heat. Add the tofu cubes and pan-fry for 5-7 minutes, turning occasionally, until golden and crispy on all sides. Season with a splash of soy sauce near the end, then remove from heat.
- 3While the tofu cooks, slice the red bell pepper, cucumber, and green onions. Peel and grate or julienne the carrot. Grate the ginger.
- 4In a small bowl or jar, whisk together the miso paste, vinegar, sesame oil, grated ginger, and a splash of water if needed to reach your desired consistency.
- 5In a large bowl, combine the fresh spinach, sliced vegetables, and crispy tofu.
- 6Drizzle the dressing over the salad and toss gently to coat. Garnish with sesame seeds and serve immediately.
