A fragrant and flavorful one-pot dish of spiced chicken layered with aromatic basmati rice, saffron, and caramelized onions.
Experience the ultimate in aromatic comfort food with this Classic Chicken Biryani. This Classic Chicken Biryani is a masterpiece of Indian cuisine, layering succulent marinated meat with perfectly fluffy long-grain basmati rice. The secret to a world-class Classic Chicken Biryani lies in the 'dum' cooking method—a slow-steaming process that allows the spices to penetrate every single grain of rice while keeping the chicken incredibly tender.
We start by marinating the chicken in a mixture of yogurt and warm spices like garam masala, turmeric, and chili powder. This not only flavors the meat but tenderizes it to perfection. The addition of fried onions (biryani's signature 'birista') provides a deep, caramelized sweetness that balances the heat of the spices. Using high-quality basmati rice is non-negotiable; its long, slender grains are the perfect vessel for the aromatic saffron-infused milk and fresh mint.
Cooking biryani can feel intimidating, but the key is in the parboiling of the rice. You want the rice to be about 70% cooked before layering, so it finishes steaming perfectly without becoming mushy. This dish is perfect for Sunday feasts, dinner parties, or any time you want a meal that feels like a celebration. Follow these steps to achieve restaurant-quality results right in your own kitchen. Serve it with a side of cool cucumber raita to complete the experience.
Ingredients
- 400 g Basmati Rice (about 2 cups)
- 600 g Chicken Thighs (boneless, bite-sized)
- 120 ml Plain Yogurt (about ½ cup)
- 2 count Yellow Onions (thinly sliced)
- 2 tbsp Ginger-Garlic Paste
- 3 tbsp Ghee or Vegetable Oil
- 1 tbsp Garam Masala
- 0.5 tsp Turmeric Powder
- 15 g Fresh Mint Leaves (about ½ cup chopped)
- 4 tbsp Warm Milk
- 1 pinch Saffron Strands
Instructions
- 1In a bowl, mix the chicken with yogurt, ginger-garlic paste, garam masala, turmeric powder, and a pinch of salt. Let it marinate for at least 30 minutes.
- 2Soak the saffron strands in the warm milk and set aside.
- 3Wash the basmati rice until the water runs clear. In a large pot of boiling salted water, cook the rice for about 5-7 minutes until it is 70% cooked (it should still have a bite). Drain and set aside.
- 4Heat ghee or vegetable oil in the heavy-bottomed pot. Add the yellow onions and fry until they are deep golden brown and crispy. Remove half of the onions for garnishing.
- 5Add the marinated chicken to the pot with the remaining yellow onions. Cook over medium heat for 5-8 minutes until the chicken is no longer pink on the outside.
- 6Lower the heat and spread half of the fresh mint leaves over the chicken. Layer the parboiled basmati rice evenly on top.
- 7Drizzle the saffron-infused milk and the reserved yellow onions over the rice. Top with the remaining fresh mint leaves.
- 8Cover the pot with a tight-fitting lid. Cook on very low heat (dum) for 15-20 minutes until the rice is fully tender and the chicken is cooked through.
- 9Let it rest for 5 minutes, then gently fluff the rice and serve.
Chef's Tips
- •Do not overcook the rice during the boiling stage; if it is fully cooked before layering, the final biryani will be mushy.
- •For the best aroma, use high-quality long-grain aged basmati rice.
- •If your lid isn't perfectly airtight, place a clean kitchen towel or a piece of aluminum foil under the lid to seal in the steam.
