Ingredients
- 150 g Fresh Spinach
- 150 g Blueberries
- 60 g Goat Cheese
- 30 g Walnuts
- 0.25 medium Red Onion
- 3 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tsp Brown Sugar
- 1 pinch Salt
- 1 pinch Black Pepper
Instructions
- 1Wash and dry the spinach and blueberries thoroughly.
- 2Thinly slice the red onion. If the onion flavor is too strong, you can soak the slices in cold water for 5 minutes and then drain.
- 3Roughly chop the walnuts. For extra flavor, you can briefly toast them in a dry pan over medium heat for 2-3 minutes until fragrant, then let cool.
- 4In a small bowl or jar, whisk together the olive oil, balsamic vinegar, brown sugar, salt, and black pepper until emulsified.
- 5In a large serving bowl, combine the spinach, blueberries, red onion, and walnuts.
- 6Crumble the goat cheese over the top.
- 7Drizzle the dressing over the salad just before serving and toss gently to coat.
Chef's Tips
- •Add grilled chicken or boiled eggs to turn this into a high-protein main course.
- •If you don't have walnuts, pecans or sunflower seeds work great as a substitute.
- •Dress the salad immediately before eating to prevent the spinach from wilting.
