Welcome to your new favorite morning routine! This Refreshing Berry & Mint Smoothie Bowl is the ultimate healthy, diet-friendly breakfast or snack that feels like a decadent treat. When you combine antioxidant-rich frozen blueberries with vibrant fresh strawberries and a hint of cooling fresh mint, you create a bowl that is as delicious as it is nutritious. Making a Refreshing Berry & Mint Smoothie Bowl at home is incredibly easy and allows you to control exactly what goes into your body, keeping it naturally low in calories and completely free of refined sugars, thanks to a touch of stevia sweetener powder. The thick, creamy base is achieved by using your highly perishable yoghurt, while the frozen blueberries provide that signature frosty, ice-cream-like texture that makes smoothie bowls so deeply satisfying.
Mint might seem like an unexpected addition, but it beautifully elevates the natural sweetness of the berries and adds a uniquely refreshing twist that wakes up your palate. This Refreshing Berry & Mint Smoothie Bowl is not just about vibrant flavor; it is a true nutritional powerhouse. We top it off with chia seeds and crushed walnuts from your pantry to add essential omega-3 fatty acids, plant-based protein, and important dietary fiber. This smart combination of healthy fats, protein, and fiber ensures that you stay full, focused, and energized for hours, perfectly aligning with your diet-friendly goals. Whether you enjoy it as a quick post-workout recovery meal or a leisurely weekend breakfast, this vibrant bowl proves that eating healthy never has to be boring or flavorless.
Ingredients
- 75 g Frozen Blueberries (about 1/2 cup)
- 75 g Fresh Strawberries (about 1/2 cup, hulled)
- 5 g Fresh Mint (about 10-12 leaves)
- 150 g Yoghurt (about 2/3 cup)
- 1 tsp Stevia Sweetener Powder
- 1 tbsp Chia Seeds
- 15 g Walnuts (about 2 tbsp chopped)
- 0.5 cup Frozen Blueberries
- 0.5 cup Fresh Strawberries (hulled)
- 2 tbsp Fresh Mint (loosely packed)
- 0.66 cup Yoghurt
- 1 tsp Stevia Sweetener Powder
- 1 tbsp Chia Seeds
- 2 tbsp Walnuts (chopped)
Instructions
- 1Thoroughly wash the fresh strawberries and fresh mint leaves. Remove and discard the stems from the strawberries.
- 2In your blender, combine the frozen blueberries, fresh strawberries, fresh mint, yoghurt, and stevia sweetener powder.
- 3Blend on high until the mixture is completely smooth and thick. If your blender gets stuck, pause and scrape down the sides, or add a tiny splash of water to help it along (you want it to stay thick like soft-serve ice cream).
- 4Pour the thick smoothie mixture into a serving bowl.
- 5Sprinkle the chia seeds and crushed walnuts in neat lines or clusters over the top of the bowl.
- 6Garnish with a final tiny sprig of mint if desired, and enjoy immediately with a spoon!
Chef's Tips
- •To make the bowl even thicker, you can chop and freeze your strawberries ahead of time.
- •If you prefer a sweeter profile, adjust the stevia amount to your liking before pouring the smoothie out of the blender.
- •Feel free to mix the chia seeds directly into the smoothie before eating if you prefer a pudding-like texture.
