A filling, creamy casserole with fluffy rice, crispy smoked bacon, sautéed mushrooms, and melted cheese. A perfect idea for a home-cooked dinner.
Looking for a quick, filling dinner idea that the whole family will love? Rice, bacon, and mushroom casserole is an absolute comfort food classic. When it's cold outside or you just crave something homemade, warm, and incredibly heartening, this dish works phenomenally. The combination of crispy, flavorful smoked meat with fried mushrooms has successfully reigned in kitchens for years. Thanks to the addition of heavy cream, the whole dish becomes extremely creamy and delicate, and the pre-cooked rice perfectly absorbs all the aromas gathered during frying. Rice, bacon, and mushroom casserole has another huge advantage – it's a perfect recipe for a delicious zero-waste meal. We often have rice left over from the day before, or mushrooms in the fridge that need using up. Just add a flavorful meat element, generously cover with a thick layer of your favorite yellow cheese, and put it in the oven. The cheese melts wonderfully, creating a golden and crispy crust on top that safely hides the fluffy and flavor-packed interior. This homemade rice, bacon, and mushroom casserole tastes exceptional straight out of the oven, but you can also easily pack it into a lunch container for work the next day and reheat it. Be sure to try this proven method for a quick, insanely delicious meal!
Ingredients
- 200 g White Rice (about 1 cup (dry))
- 150 g Smoked Bacon
- 300 g Mushrooms
- 1 pc Onion
- 2 cloves Garlic
- 150 ml Heavy Cream (30%)
- 100 g Yellow Cheese (e.g., Gouda) (about 1 cup (grated))
- 0.5 tsp Salt
- 0.5 tsp Black Pepper
- 2 tbsp Parsley
Instructions
- 1Cook the rice in salted water al dente according to the package instructions, then drain and set aside.
- 2Dice the smoked bacon or cut into small strips. Heat a dry pan and fry the bacon until crispy.
- 3Finely chop the onion and press the garlic through a press. Add to the pan with the rendered bacon fat and fry for about 2-3 minutes until the onion softens.
- 4Clean the mushrooms, slice them, and add to the pan. Sauté everything together until the water from the mushrooms has completely evaporated. At the end of frying, season with salt and black pepper.
- 5In a casserole dish, mix the cooked rice with the contents of the pan.
- 6Pour the cream evenly over everything and sprinkle the top with grated yellow cheese.
- 7Bake in an oven preheated to 180°C (350°F) for about 15-20 minutes until the cheese is melted and slightly golden.
- 8Before serving, sprinkle the casserole with chopped parsley.
Chef's Tips
- •If the bacon doesn't render enough fat to sauté the vegetables, you can add a little butter or oil to the pan.
- •Yesterday's rice works perfectly for this casserole, making it an ideal dish for cleaning out the fridge.
- •You can diversify the recipe by adding canned corn, green peas, or blanched broccoli florets.
