A fresh chopped salad featuring fried halloumi, toasted bread, and a tangy pomegranate dressing.
This Crispy Halloumi & Zaatar Fattoush Salad is the ultimate celebration of texture and fresh flavors, bringing the sunny taste of the Levant right to your kitchen. Fattoush is traditionally a "bread salad" designed to use up leftover flatbreads, and this version elevates the concept by adding golden, squeaky cubes of fried Halloumi Cheese for a substantial protein boost. The base is a colorful mosaic of chopped Cucumbers, juicy Tomatoes, peppery Radishes, and crisp Green Onions, providing a satisfying crunch in every bite. Toasting your Wholewheat Bread until it is essentially a crouton adds a rustic, earthy element that soaks up the dressing beautifully. The star of the show, however, is the dressing itself: a tangy emulsion of Olive Oil, Lemon Juice, and rich Pomegranate Molasses, seasoned with aromatic Zaatar and Mint. This salad is not just a side dish; it is a complete, balanced meal perfect for a light lunch or a vibrant dinner. It utilizes your most perishable produce while showcasing pantry staples like molasses and zaatar, creating a harmony of savory, tart, and herbal notes that will leave you feeling refreshed and satisfied.
Ingredients
- 200 g Halloumi Cheese
- 2 slices Wholewheat Bread
- 2 medium Tomatoes
- 2 small Cucumbers
- 4 whole Radishes
- 2 stalks Green Onions
- 15 g Fresh Mint
- 3 tbsp Olive Oil
- 1 tbsp Pomegranate Molasses
- 1 tbsp Lemon Juice
- 1 tsp Zaatar Powder
- 1 clove Garlic
Instructions
- 1Cut the Wholewheat Bread into bite-sized squares. Heat a splash of Olive Oil in a pan over medium heat and toast the bread until golden and crispy (about 3-4 minutes). Remove and set aside.
- 2Slice the Halloumi Cheese into cubes or thick slices. In the same pan, fry the cheese for 2-3 minutes per side until golden brown. Remove from heat.
- 3Chop the Tomatoes, Cucumbers, and Radishes into similar-sized chunks. Slice the Green Onions thinly and roughly chop the Fresh Mint.
- 4In a small bowl, whisk together the Pomegranate Molasses, Lemon Juice, remaining Olive Oil, crushed Garlic, Zaatar Powder, and a pinch of salt to make the dressing.
- 5In a large salad bowl, combine the chopped vegetables and crispy bread. Pour the dressing over the salad and toss well.
- 6Top with the warm fried Halloumi Cheese and serve immediately while the bread is still crunchy.
Chef's Tips
- •If you have frozen pomegranate seeds, thaw a handful and sprinkle on top for extra pop.
- •Serve immediately; otherwise, the bread will get soggy from the dressing.
