Ingredients
- 300 g Broccoli (approx. 3 cups florets)
- 200 g Button Mushrooms (approx. 2 cups chopped)
- 200 g Curd Cheese (Lor) (approx. 1.5 cups)
- 2 tbsp Olive Oil
- 30 g Walnut Halves (quarter cup coarsely chopped)
- 2 clove Garlic
- 50 g Grated Kashar (or Mozzarella) (half a cup)
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 1 tsp Sweet Paprika
Instructions
- 1Preheat the oven to 200°C (400°F).
- 2Cut the washed broccoli into small bite-sized florets and dry them thoroughly.
- 3Wipe the button mushrooms with a damp cloth and quarter them. Prepare them along with the crushed garlic.
- 4In a large bowl, toss the broccoli, mushrooms, garlic, olive oil, salt, black pepper, and sweet paprika until the vegetables are well coated.
- 5Spread the seasoned vegetables evenly into a baking dish.
- 6Sprinkle the crumbled curd cheese and coarsely chopped walnuts homogeneously over the top.
- 7Place the dish in the oven and bake for about 20 minutes until the vegetables soften and the cheese starts to color slightly.
- 85 minutes before taking it out of the oven, sprinkle the grated kashar cheese over the dish and continue baking until the cheese melts and turns golden.
- 9Serve hot.
