- 100 g Baby Potatoes (2-3 baby potatoes)
- 300 ml Water
- 3 tbsp Coconut Milk

- 1Peel the sweet potato and baby potatoes, then dice them into very small, uniform cubes so they cook quickly and become extra soft.
- 2Rinse the red lentils thoroughly under running water until the water runs mostly clear.
- 3Place the diced sweet potato, baby potatoes, red lentils, and water into a small saucepan.
- 4Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for 20 minutes.
- 5Check to ensure all the water has been absorbed and the red lentils and potatoes are falling apart and completely tender.
- 6Stir in the coconut milk. Using the back of a fork or a potato masher, mash everything together directly in the pot until you reach a smooth, soft consistency.
