A lightning-fast, creamy stroganoff prepared with aromatic rotisserie chicken, cream, and pickled cucumbers. Served with pasta, fresh tomato, and bread for dipping.
Is there anything more comforting after a long day than a hot, homemade Rotisserie Chicken Stroganoff with Pasta? This recipe is an absolute hit that proves you can create a restaurant-worthy dish from simple ingredients. Using pre-cooked meat significantly reduces kitchen time, making this Rotisserie Chicken Stroganoff with Pasta the perfect choice for a quick midweek dinner. Traditional stroganoff is famous for its deep, creamy sauce, and we achieve this effect instantly by combining aromatic sautéed onions, delicate cream, and a touch of flour for perfect silkiness. The key to balance in this dish is, of course, the pickled cucumbers – their sharp, sour taste perfectly cuts through the richness of the creamy sauce and gives the whole dish a characteristic Eastern European flair. Instead of traditional rice, we serve it with classic pasta that perfectly absorbs every milliliter of sauce. It's served alongside a refreshing tomato salad for lightness and crusty bread, absolutely essential for wiping up the remains of the delicious sauce from the plate. Make this Rotisserie Chicken Stroganoff with Pasta today, and it will surely become a permanent fixture in your culinary repertoire thanks to its amazing flavor and minimal preparation effort.
Ingredients
- 250 g Rotisserie chicken (shredded) (about 2 cups shredded meat)
- 200 g Pasta (about 2.5 cups dry)
- 1 whole Onion (medium)
- 2 whole Pickled Cucumbers (medium)
- 100 g Cream (about half a cup)
- 1 tbsp Wheat flour
- 1 whole Tomato (large)
- 2 slices Bread
- 1 tbsp Cooking oil
- 150 ml Water (or broth)
- 0.5 tsp Salt
- 0.5 tsp Pepper
Instructions
- 1Bring salted water to a boil in a pot. Add the pasta and cook al dente according to the package instructions, then drain.
- 2Meanwhile, finely dice the onion, cut the pickled cucumbers into strips, and shred the rotisserie chicken meat into smaller pieces.
- 3Heat the oil in a deep frying pan. Add the onion and fry for about 3 minutes until translucent.
- 4Dust the onion with flour, mix thoroughly, and fry for one minute.
- 5Pour in the water or broth, stirring constantly to avoid lumps. Add the cream and bring to a boil until the sauce thickens slightly.
- 6Add the prepared rotisserie chicken and pickled cucumbers to the sauce. Season with salt and pepper to taste, and simmer over low heat for 2 minutes.
- 7Toss the cooked pasta directly into the pan with the sauce and mix well so it's thoroughly coated in the creamy emulsion.
- 8Cut the tomato into slices or wedges and sprinkle lightly with salt and pepper.
- 9Serve the stroganoff hot with tomato slices on the side and crusty bread to wipe up the remaining sauce from the plate.
Chef's Tips
- •Before adding cream to the hot sauce, mix it in a cup with two tablespoons of the hot liquid from the pan (temper it), so it doesn't curdle during cooking.
- •If the sauce is too thick, you can add a little bit of the pasta cooking water.
