A creamy and fluffy omelet with sautéed leeks, tender cheese, and a smoky hint of paprika.
If you are looking for the perfect breakfast, this creamy leek and cheese omelet will become your absolute favorite. There is nothing better than starting your morning with a warm, flavor-rich dish. This creamy leek and cheese omelet combines the natural sweetness of lightly sautéed leeks with the incredible creaminess provided by heavy cream and a soft, melting cheese like classic mozzarella or delicate stracciatella. Many often underestimate leeks in morning dishes, but they are what give omelets that French sophistication and a subtle, slightly sweet aroma that is completely different from the sharp smell of regular onions. And if you add just a pinch of smoked paprika, this creamy leek and cheese omelet is instantly transformed: the light smoky note perfectly highlights the creamy taste of melted cheese and whisked eggs, creating a true gastronomic masterpiece right in your home kitchen. Making this dish is a pure pleasure, as the whole process takes only a few minutes. You can use your fresh eggs to make the texture as airy, porous, and melt-in-your-mouth as possible. Moreover, as you rightly noted, leeks can be sliced into rings and frozen in portions in advance — so you will always have an excellent, pre-prepared base for quick, healthy, and incredibly delicious breakfasts. Try experimenting with cheeses: classic mozzarella will make the texture more traditional and stretchy, while stracciatella will give the dish incredible creaminess and juiciness. This recipe perfectly proves that even from the simplest ingredients, you can easily create a restaurant-level dish.
Ingredients
- 3 count Eggs
- 50 g Leek (about ½ cup chopped)
- 2 tbsp Heavy cream (at least 20%)
- 50 g Mozzarella or stracciatella (about ½ cup)
- 1 tbsp Olive oil
- 0.5 tsp Smoked paprika
- 0.25 tsp Salt
- 0.25 tsp Black pepper
Instructions
- 1Thoroughly wash the leek to remove any sand and slice the white part into thin half-rings.
- 2Heat the olive oil in a pan over medium heat. Add the leek and sauté for about 3-4 minutes until it becomes very soft and fragrant.
- 3In a small bowl, lightly whisk the eggs with the heavy cream, salt, and black pepper.
- 4Pour the egg mixture into the pan over the leeks. Slightly reduce the heat.
- 5When the omelet is almost set but the center is still a bit moist, place the hand-torn mozzarella (or stracciatella) onto one half.
- 6Generously sprinkle the smoked paprika over the cheese layer.
- 7Carefully fold the omelet in half using a spatula, covering the cheese with the other half. Keep it in the pan for another 30 seconds to melt the cheese, and serve immediately.
Chef's Tips
- •A great prep idea: slice the leeks into rounds and freeze them in a bag. You can toss them into the pan straight from the freezer!
- •If using stracciatella, it can be added right before serving on top of the already folded hot omelet — it will melt slightly and create an incredible texture.
