A gourmet twist on the classic cheese sandwich featuring gooey melted Gouda, sweet caramelized red onions, and fresh thyme on toasted wholewheat bread.
There is nothing quite like a warm, crispy cheese sandwich, but this Caramelized Onion & Gouda Grilled Cheese takes comfort food to an entirely new gourmet level. By combining perfectly melted Gouda cheese with sweet, deeply caramelized red onions, this Caramelized Onion & Gouda Grilled Cheese offers a sophisticated flavor profile that remains incredibly easy to make at home. The secret to the savory depth lies in the slow-cooked onions, enhanced with a splash of balsamic vinegar and fragrant fresh thyme, which cuts right through the richness of the dairy. Using your hearty wholewheat bread ensures a robust crunch on the outside while maintaining a soft, pillowy interior that soaks up all the beautiful buttery goodness. Whether you are looking for a quick yet elevated lunch, or a cozy weekend meal, this Caramelized Onion & Gouda Grilled Cheese hits all the right notes. Gouda is renowned for its fantastic melting qualities, creating that iconic cheese pull we all crave, while its mild nuttiness pairs flawlessly with the earthy thyme. Cooking the sandwich slowly over medium-low heat guarantees an edge-to-edge golden brown crust without burning the bread before the cheese is fully melted. Serve it hot for the ultimate savory indulgence.
Ingredients
- 2 slices Wholewheat Bread
- 50 g Gouda Cheese (about 1/2 cup grated)
- 60 g Red Onions (1/2 medium onion)
- 15 g Butter (1 tbsp)
- 1 tsp Balsamic Vinegar
- 1 tsp Fresh Thyme
Instructions
- 1Slice the red onions thinly and grate the Gouda cheese.
- 2Melt half of the butter in a skillet over medium-low heat. Add the red onions and cook slowly for about 10 minutes until soft and caramelized.
- 3Stir the balsamic vinegar and fresh thyme into the red onions, cooking for 1 more minute until the liquid evaporates. Remove from the skillet and set aside.
- 4Wipe the skillet clean. Butter one side of each slice of wholewheat bread with the remaining butter.
- 5Place one slice of wholewheat bread, butter-side down, into the unheated skillet. Layer half of the Gouda cheese, the caramelized red onions, and the remaining Gouda cheese on top.
- 6Place the second slice of wholewheat bread on top, butter-side up.
- 7Turn the heat to medium-low. Cook the sandwich for 3-4 minutes until the bottom is golden brown.
- 8Carefully flip the sandwich and cook for another 3-4 minutes, pressing down lightly, until the wholewheat bread is crisp and the Gouda cheese is completely melted.
- 9Remove from the pan, slice in half, and serve immediately.
