- 200 ml Warm water

Instructions
- 1In a large bowl, combine the bread flour, warm water, instant yeast, and salt. Use a spoon or your hand to roughly combine the ingredients. The dough will be very loose and sticky – that's exactly how it should look at this stage.
- 2Drizzle the top of the dough with olive oil to prevent it from drying out. Cover the bowl with a clean cloth or plastic wrap and set in a warm place for about 1.5 to 2 hours, until it doubles or triples in size.
- 3During the rising process, it's worth folding the dough twice: grab one edge with wet hands, stretch it, and fold it over the center. Repeat from each of the four sides (stretch and fold technique).
- 4Once the dough has risen, generously dust the work surface with an extra portion of flour. Gently turn the dough out onto it, trying not to squeeze out the precious air bubbles.
- 5Sprinkle the top of the dough with a little flour and gently form a flat rectangle. Using a knife or a dough scraper, cut it into 4 smaller portions (mini ciabattas).
