A delicious, plant-based sandwich spread that mimics the taste and texture of egg salad. Rich in protein and fiber.
Looking for a healthy and nutritious breakfast idea that supports your brain? Egg-style Chickpea Spread is an excellent alternative to traditional spreads, especially if you want to limit your intake of animal products. This recipe for Egg-style Chickpea Spread is based on legumes, which are a cornerstone of the MIND diet. Chickpeas provide essential plant protein and fiber, ensuring you feel full for a long time. The key to success in this dish is turmeric, which not only gives the spread a beautiful yellow color but also has strong anti-inflammatory properties, protecting neurons from damage. The addition of chives brings freshness, while whole-grain bread provides complex carbohydrates that act as fuel for your mind. Why choose this recipe? Because it’s quick, cheap, and incredibly aromatic. If you miss the taste of eggs, you can add a pinch of black salt (kala namak), which has a characteristic sulfurous aroma. Chickpea spread pairs perfectly with fresh vegetables like tomatoes or cucumbers, making this breakfast a complete meal that supports concentration and memory throughout the day.
Ingredients
- 240 g Canned or jarred chickpeas (1 can (drained weight))
- 2 tbsp Natural yogurt (or soy)
- 1 tsp Mustard
- 0.25 tsp Turmeric
- 1 handful Chives (about 10-15g)
- 4 slices Whole-grain bread
Instructions
- 1Drain the chickpeas and rinse them under running water.
- 2In a bowl, mash the chickpeas with a fork so that small pieces remain (do not make a smooth purée, to maintain the texture of an egg spread).
- 3Add the yogurt, mustard, and turmeric. Mix everything thoroughly.
- 4Finely chop the chives and add them to the bowl. Season with salt and pepper to taste.
- 5Spread the finished paste onto slices of whole-grain bread.
- 6Optionally, garnish the sandwiches with an extra portion of chives or your favorite vegetables.
Chef's Tips
- •For an authentic egg flavor, use black salt (Kala Namak) instead of regular salt.
- •If you prefer a creamier consistency, you can add a bit of ripe avocado to the spread.
- •The spread tastes best after about 10 minutes in the fridge, once the flavors have melded.
