Ingredients
- 2 slices Whole grain bread
- 0.5 piece Avocado (about ½ cup mashed)
- 1 piece Egg
- 1 handful Baby spinach (about 30g)
- 1 tbsp Pumpkin seeds
- 1 tsp Olive oil
Instructions
- 1In a small pot, boil water and cook the egg soft-boiled (approx. 6 minutes) or hard-boiled, as preferred. After cooking, cool, peel, and slice.
- 2In the meantime, scoop out the avocado flesh and mash it with a fork in a small bowl, mixing with olive oil and a pinch of salt and pepper.
- 3Toast the whole grain bread in a toaster or on a dry pan until crispy.
- 4Place a layer of fresh baby spinach on each slice.
- 5Spread the avocado paste over the spinach.
- 6Place the egg slices on top and sprinkle everything with pumpkin seeds.
